Pumpkin Cookies

Ingredients: 

1 cup shortening

1 cup sugar

1 ½ cups pumpkin

1 egg

2 cups flour

1 tsp baking soda

1 tsp cinnamon

½ tsp salt

1 cup butterscotch chips

nuts

raisins

Frosting:

3 Tbsp butter

4 tsp milk

½ cup brown sugar

1 cup confectioners sugar

¾ tsp vanilla

Directions:

Cream shortening and sugar.  Add pumping and egg.  Combine flour, soda, salt, and cinnamon and mix into creamed mixture.  Stir in butterscotch chips, nuts, raisins.  Spoon onto ungreased cookie sheets and bake at 375 degrees for 10-12 minutes. 

For frosting:  In saucepan cook sugar til dissolved.  Let cool, then stir in 1 cup confectioners sugar and vanilla.  Frost cookies while hot.
